Properly stored produce cuts down on food waste and makes your grocery budget go further every week. First things first before we get into the specifics of produce storage, lets cover some basic dos and donts that will keep your fruits and veggies fresher longer.
General Tips for Storing Produce
Dont wash fruits and vegetables until youre ready to use them. Washing removes natural protective barriers and introduces moisture, which encourages the growth of bacteria and mold.
Do remove any fasteners, like twisty ties or rubber bands let that produce breathe!
Dont put everything in your fridge not all fruits and vegetables need to be refrigerated.
Do remove greens from root vegetables like carrots, radishes, and beets. Butdon'tthrow those greens out you can use them in sauts and pestos!
Do store fruits and vegetables separately, since many fruits emit ethylene gas as they ripen, which will cause other produce in close proximity to spoil faster.
Dont feel pressured to wrap fruits and vegetables in plastic biodegradable bags are better becausethey'remore breathable. We love reusable beeswax wraps too.
What Goes in the Fridge
The crisper drawers at the bottom of your fridge are the best place for most fruits and vegetables. Most refrigerators have controls that let you open and close the crisper vents to help manage humidity and the effects of ethylene gas. Its a good idea to open one set of vents all the way this will increase airflow and create a low-humidity environment. Keep the other set of vents closed to create a high-humidity drawer. Heres what goes in each part of the fridge.
In the Low-Humidity Crisper Drawer
This is where youll store produce (mostly fruit) that tends to rot and release ethylene gas. The low humidity slows ripening, while the open vent allows ethylene gas to escape before it spoils whatever you stash here. This is also where youll want to store fruit that has ripened on your counter things like peaches, oranges, and pears.
Apples Wrap loosely in plastic or biodegradable bags. You can also store them in a cool, dry place, like your pantry.
Lemons and limes Place in a sealed bag or container.
In the High-Humidity Crisper Drawer
This is where youll store produce (mostly vegetables) that requires moisture to stay fresh and crisp, like greens and some root vegetables.
Asparagus Wrap the bundle in paper towels to absorb excess moisture, then wrap loosely in a biodegradable bag. You can also trim a half-inch off the end of the stalks and stand them upright in a glass jar with an inch or so of water. Set the jar on the shelves and cover with a biodegradable bag.
Beets, turnips, and radishes Remove and save the greens (theyre edible!) then wrap loosely in a biodegradable bag.
Broccoli and cauliflower Wrap loosely in a biodegradable bag. You can also store broccoli stem-side down in a jar of water.
Brussel sprouts Wrap loosely in a biodegradable bag.
Carrots, fennel, and celery Remove the greens or fronds and wrap loosely in a biodegradable bag. You can also store carrots in a container covered in water just be sure to replace the water every few days. Celery can last even longer if you wrap it in aluminum foil.
Green onions, scallions, ramps, and spring onions Wrap the bulbs in a moist paper towel then wrap loosely in a biodegradable bag. You can also keep them in a jar with water on your windowsill if you plan to use them soon.
Hard herbs (rosemary, thyme, chives, sage, oregano) Wrap tightly in a damp paper towel then place inside a sealed bag or container.
Jerusalem artichokes (aka sunchokes) Handle with care as they bruise easily. Wrap tightly in a biodegradable bag.
Leafy greens (kale, collard greens, cabbages, chard, dandelion greens, lettuces, watercress, endive, escarole, radicchio, and spinach) Wrap loosely in a biodegradable bag.
Zucchini and summer squash Wrap loosely in a biodegradable bag.
On the Shelves
Cherries Never leave them at room temperature their flavor will go down hill fast. Wrap them in a biodegradable bag before you stick them in the fridge.
Mushrooms Leave in original packaging or store in a covered container with holes for ventilation.
Peppers Wrap them loosely in a biodegradable bag.
Soft herbs (parsley, cilantro, dill, tarragon, chervil, mint, parsley) Trim the stems, place them stem-side down in a jar or glass of water, and cover the leaves with a biodegradable bag. Swap out the water every day or two to keep them fresh.
Strawberries, blueberries, raspberries, blackberries Try to eat or cook them the day you buy them. If you need to store berries, spread them out on a cloth or paper towel (so theydon'tstack and bruise) and put them in a partially-covered container, so moisture can escape.
What Goes in the Pantry
Onions (red, white, and yellow), shallots, and garlic Keep them in a cool, dark place with good ventilation. Make sure to keep them separate from potatoes.
Pomegranates They should last a couple of weeks if you keep them somewhere cool and dark. Stick them in the fridge if you want them to last even longer.
Potatoes and sweet potatoes Keep them somewhere cool, dry, and dark in a paper bag or cardboard box. Be sure to keep them away from your onions.
Winter squash Most varieties will last a long time if kept in a cool, dry place.
Reusable and Sustainable Food Storage Products
Plastic bags and containers are cheap and easy to find, which is whythey'rein pretty much everyones kitchens. Thankfully, there are some new products, as well as some old standbys, that offer more sustainable options for storing everything from fruits and vegetables to pantry staples. Here are some of our favorites:
Glass jars Versatile and available in many sizes, these are good to have on hand. We love Weck jars, which are beautiful but a little pricy. Mason jars are also pretty and much more affordable.
Vejibags These cotton bags are designed to retain moisture. You wet them, wring them out, then put produce, like greens and root vegetables, inside. The damp bags keep everything crisp and fresh for longer.
Silicone zip-top bags These work just like plastic baggies, except that you wash and reuse them becausethey'remade out of durable silicone. These lunchbox-friendly essentials will pay for themselves in no time.
Beeswax wrap A sustainable alternative to plastic wrap. Use these biodegradable, reusable sheets made from cotton and beeswax to cover bowls and wrap half an onion or avocado, sandwiches, or leftovers.

View ArticleIn order to be considered for inclusion in our Marketplace, meat products must meet the following baseline criteria.
All meat producers (beef, pork, sheep, goat & poultry) must provide the following documents to us:
Third party labor certification or signed Good Eggs Labor Standards.
USDA Slaughterhouse paperwork.
Organic certification (if marketed as organic).
Animal Welfare claims.
Non-GMO certification if marketed as GMO-Free Certified.
A list of farms/ranches from which animals are sourced.
All meat producers must be fully transparent, which includes allowing us to come for site visits. We expect that they maintain chain of custody, and can identify every farm and ranch from which they source animals.
All animals must:
Be raised in the United States.
Not treated with hormones.
Not treated with subtherapeutic doses of antibiotics. If an animal is treated with a therapeutic dose of antibiotics, it cannot be subsequently used for production.
Specific guidelines for ruminants (beef, sheep & goat)
In addition to the documents listed above, producers of ruminants must provide GAP Step-4 or Step-5 certification, AWA Certification, Certified Humane or letter of guarantee that it adheres to at least Step-4 standards.
Ruminants must be raised on pasture, and not finished on a feedlot.
Ruminants must not be raised or finished on a CAFO/AFO as defined by the USDA (AFO- animals confined more than 45 days in a 12 month period, CAFO as an AFO with more than 1000 animal units).
Ruminants must not be fed or finished on GMO corn or soy.
We prioritize working with ranchers who raise 100% grass-fed and finished animals, or who feed their animals what would otherwise be waste products, such as brewery grains.
Specific guidelines for pork
In addition to the documents listed above, pork producers must provide GAP Step-3, -4, of -5 certification or letter of guarantee that it adheres to at least Step-3 standards.
Pigs must not be raised or finished on a CAFO as defined by the USDA (as a non-pastured-centered AFO with more than 1000 animal units).
Pigs must not be fed or finished on GMO corn or soy.
Specific guidelines for poultry (chicken, duck, turkey, and other game birds)
In addition to the documents listed above, poultry producers must provide GAP Step-3, -4, of -5 certification or letter of guarantee that it adheres to at least Step-3 standards.
Birds must be fed a 100% vegetarian diet.
Non-pastured birds must be slaughtered via atmosphere stunning.
All of these criteria cover any product that is more than 50% meat by weight or volume or is the first ingredient. Any meat used as an ingredient thatisn'tcovered by these criteria must meet the sourcing criteria for the category under which the product containing meat falls.
Along with our baseline criteria, we also keep the following philosophies in mind when choosing who to partner with:
We aim to support vertically integrated operations where animals are allowed to grow at a natural pace and slaughtered at an older age, compared to conventional operations.
We aim to utilize all parts of the animal wherever possible. This helps us decrease waste, pay ranchers a premium price, keep every aspect of the process within the local economy, and honor the life of the animal.
We support ranching operations that go out of their way to use holistic grazing practices that improve the land and have a net positive environmental impact.
View ArticleHeres what goes into sourcing our absurdly fresh produce.
In order to be considered for inclusion in our marketplace, all farms and growers must meet the following baseline criteria.
Transparency
The growers we work with directly must be fully transparent, and be open to site visits.
Where applicable, all growers and suppliers we work with demonstrate compliance with the Food Safety Modernization Act.
Organic
All the produce we include in the Marketplace is certified organic, with the following exceptions:
If we have a direct relationship with the grower and the grower has signed an affidavit guaranteeing that theydon'tuse any pesticides, fertilizers or other inputs that are not allowed under the National Organic Programs National List of Allowed and Prohibited Substances.
If we have a direct relationship with the grower and theyve worked with us to develop a plan to meet the above exception within three years, and are currently not using any substance on the prohibited substance list.
If the product is grown in a closed-loop hydroponic or aquaponic operation either without synthetic fertilizer or with the use of synthetic fertilizer well below the standard usage for field-grown conventional operations; and without the use of any pesticides on the National Organic Programs National List of Allowed and Prohibited Substances.
Note: In very rare instances, as a last resort, we may deviate from these requirements. For example, if we find out four days before Thanksgiving that all organic Brussels Sprouts are infested with aphids, we would consider sourcing a conventional product. If we did this, we would call out the produce as Conventional. We will not deviate from our organic requirement for the sake of our general, everyday assortment.
Labor practices
All produce must come from growers or vendors who have filled out a detailed Labor Practice Standards questionnaire that guarantees that they adhere to the following criteria:
No forced labor or human trafficking used directly or via their supply chain
No prison labor used directly or via their supply chain
No child labor used directly or via their supply chain
All employees are paid at least minimum wage
All contracted employees are paid at least minimum wage
Regular labor practice audits of suppliers, where feasible, or signed affidavits that they also meet our labor standards.
Growers must not discriminate in any employment practices, including hiring, based on any California protected class.
Growers must create a workplace free of coercion and harassment. Employees must be treated with dignity and respect.
Growers must have a reporting process that provides multiple accessible resources for reporting, including resources independent from management.
Growers may not retaliate against employees for reporting harassment.
Growers must promptly and thoroughly investigate claims of harassment.
Growers must periodically train employees on harassment policies.
Growers must provide employees with a safe working environment, following all applicable health and safety laws.
Employees must be able to take sick leave when ill without retaliation.
Employees must be able to unionize or otherwise collectively organize for their interests without retaliation.
Banned substances and processes
Wedon'tallow any of the produce we carry to undergo these processes or exposure to these substances:
Irradiation treatment
Neonicotinoids
Paraquat
1,3-D (Telone)
Glyphosate (Roundup)
Atrazine
2,4-D
Methyl Bromide
EPA Toxicity Class I (highly hazardous) pesticides
EPA Toxicity Class II (moderately hazardous) pesticides
Any pesticide not registered with the EPA
Along with our baseline criteria, we also keep the following philosophies in mind when stocking our Marketplace with produce:
We always put flavor first: a winter greenhouse tomatowon'ttaste quite as amazing as a September dry-farmed Early Girl, but well always find the best of the season. And when the flavor isn't there, were not afraid to call it a season.
Were focused on local farmers and growers: The majority of our produce comes from within 150 miles, and 80% is from within 250 miles. That means it gets to your plate much quicker than via a conventional store, full of the absurdly fresh flavor you expect. It also means a smaller carbon footprint, and more money in the local economy.
We look for growers that go above and beyond when it comes to ecological sustainability: its not just what youdon'tput on your crops. We aim to support operations that encourage ecological regeneration, biodiversity, and use renewable energy.

All products are free of ingredients produced via gene editing, which is also known as GMO 2.0 or CRISPR technology.
We intend to meet this vision by the end of 2019.
Along with our baseline criteria, we also look to build enduring relationships with producers that are reshaping our food system for good. To that end, we prioritize businesses and suppliers that:
Pay their employees a living wage.
Carry third-party labor certifications such as Food Justice Certification, Fairtrade, Fair for Life, etc.
Are certified B-Corp or are incorporated as Public Benefit Corporations.
Have employee ownership or cooperative ownership structures.
Share the cost of medical/dental/vision/other insurance benefits for both employee and their families.
Undertake programs that give back to their immediate community.
Promote practices that promote environmental sustainability and regenerative agriculture
Conserve water usage and utilize renewable energy in production or processing
Products are certified organic or utilize organic ingredients.
We also prioritize products that are certified organic or use organic ingredients. However, because were working with local and small-scale producers for which 3rd-party certification (such as organic) is often cost-prohibitive, wedon'trequire those certifications for these goods. In that case, we do obtain supporting documentation and written guarantees they meet our criteria as outlined above.
