Our goal in pursuing this project was to involve local suppliers and producers for our various ingredients and supplies. Yet, despite the quality and professionalism of French suppliers, we have been forced to buy from foreign plants for a majority of the ingredients on offer. We could not, therefore, have any control over the variation of the cost of the raw materials, nor maintain a viable and perennial economic model.
