She served as Chief Financial Officer of Carrols Corporation's Hispanic Restaurants Division, which includes the Pollo Tropical and Taco Cabana concepts. She joined Pollo Tropical in 1997, as Controller and served as its Chief Financial Officer since 1998. She led Pollo Tropical through its acquisition by Carrols. Prior to Pollo Tropical, Ms. Lopez-Blanco was with the accounting firm of Arthur Andersen. Ms. Lopez-Blanco serves as a Director at Pediatrix Medical Group, Inc.
